Manna from Devon Cooking School’s hugely popular wood fired oven cooking courses are back for a second year at the seriously stylish Deer Park Country House Hotel, just outside Honiton in East Devon. David Jones, from Manna from Devon Cooking School, has returned again this summer to teach a range of outdoor wood fired oven courses, which started in May and run through until August 2015.

During the range of exciting new courses, which will take place during the week, David will share his infectious passion and enthusiasm for cooking with The Bushman wood fired oven that is perfectly positioned at the bottom of the lawn overlooking the beautiful gardens of this 18th century hotel. What could be better than learning from wood fired oven experts in the stunning gardens of a quintessential English country house?

Cooking with a wood fired oven, a long standing tradition all over the world, has become extremely popular in recent years and is now one of the latest trends to take the UK by storm. Throughout David’s classes you’ll be taught how to prepare and cook with a wood fired oven. The four hands-on cooking classes (£95 per person per course) include a new ‘Fish and Seafood from Devon’s Wonderful Coast’ course, ‘Grill like a Gaucho’, ‘The Devon Larder’ and finally a ‘Deer Park Tandoori’ experience.

The new Fish and Seafood from Devon’s Wonderful Coast brings the flavours of the South Devon coast to the Deer Park. During the day, you will learn to fillet, prepare, cook and eat a whole variety of fresh, seasonal seafood. Recipes you will learn include roasting scallops in their shell, cooking the sweet, tender and delicate scallops to perfection, and serving them with a garlic and herb butter. Also you will cook the classic, simple yet delicious dish of whole lemon sole in butter and capers with brown shrimp.

Unashamedly meaty, charred with a dusting of wood ash, slathered with spice and served how it comes, the Grill like a Gaucho course will teach you exactly how to perfect the skill of Argentine grilling. Throughout the Argentinian inspired course you’ll master how to serve the ultimate churrasco, char grill steaks, sear squid and create the South American chimmichurri steak sauce.
The Devon Larder class celebrates all that is local. Using only fresh seasonal produce grown on our doorstep and artisan products from around the county, this course will teach you how to create an array of tasty seasonal ‘Devonian’ dishes including a free range pork in a cider and cream sauce and Devon lamb roasted in the wood fried oven filled with rosemary and garlic, served with summer vegetables.

Manna from Devon will keep things hot and spicy with their Deer Park Tandoori course. Drawing on their experiences from their trip travelling all over India, David and Holly with teach you how to grind spices, marinade meat, knead your on naans and chapattis and cook it all with a hint of flame in the wood fired oven.

Commenting on the wood fired oven cooking courses, Mark Godfrey, managing director at the Deer Park Country House Hotel, says: “Last year the courses went down a storm with all of our guests. Both David and Holly are hugely talented and these courses will bring an extra special touch to our midweek stays during the summer.”

Set in 80 acres of magnificent grounds, the 18th Century Georgian mansion hotel in East Devon boasts beautiful boutique hotel bedrooms, a stunning Italian garden and desirable restaurant. Influenced by the best of British, the Deer Park Country House Hotel is the epitome of a quintessential English Country House. ‘Cooking with a wood fired oven’ is just one of the courses in the exciting new series of laid back, informal and fun outdoor courses on offer within the grounds of the recently renovated hotel.

Established in 2005, Manna from Devon Cooking School is run by Holly and David Jones who teach cooking skills to small groups in the relaxed environment of their Victorian home overlooking the beautiful River Dart in South Devon. In addition to the main kitchen there is a second kitchen in the style of a bakery.
